This naturally sparkling dry white wine is a unique blend of three noble varieties from the Manavi micro-zone: Kakhuri Mtsvane, Rkatsiteli, and Khikhvi. Harvested in Ethno’s vineyards, the grapes are processed using the ancestral Petnat (Pét-Nat) method, where fermentation concludes inside the bottle. This technique preserves the primary freshness of the fruit while imparting a refined, lively effervescence. The wine displays a brilliant straw color in the glass. The bouquet is multifaceted, harmoniously blending notes of ripe white orchard fruits with herbal undertones. On the palate, it is energetic and well-structured; the vibrant, "cyanic" acidity and 13% alcohol content create a balanced profile that leads to a clean, medium finish. The combined aromatic complexity of Khikhvi and Kakhuri Mtsvane adds a sophisticated charm to this Petnat style. This sparkling wine perfectly pairs with seafood, Asian cuisine, light summer salads, and goat cheese.
