Produced from Saperavi grapes harvested in the distinguished village of Ziari, within the Gurjaani district of Kakheti, this semi-dry red wine reflects a sophisticated approach to winemaking. The high-altitude terroir of Ziari imparts a unique aromatic delicacy to the Saperavi variety. Crafted using the traditional Qvevri method followed by aging in oak barrels, this expression possesses a noble structure and a diverse character. The wine displays an intense pomegranate hue in the glass. The bouquet is highly expressive, featuring a harmonious blend of floral notes, aromatic spices, and pleasant sweetish undertones. On the palate, it is beautifully balanced and velvety; a vibrant, "cyanic" acidity meets smooth, round tannins derived from oak, which, combined with 13% alcohol, create a refined profile. The natural residual sugar adds a layer of softness and satisfying fullness to the finish. This Saperavi pairs excellently with spicy Asian cuisine, cold meat platters, traditional walnut-based dishes, and medium-aged cheeses.
