This dry white wine is crafted from the rare Khikhvi variety, harvested in the historic winemaking region of Akhmeta, Kakheti. At Peradze’s family winery, the optimal exposure of the plots and the generous Kakhetian sun impart a unique aromatic depth to the fruit. The wine is produced using classic techniques and further refined through aging in oak barrels, adding a layer of sophisticated complexity to its exotic profile. The wine displays an elegant straw color in the glass. The bouquet opens with a harmonious blend of white fruit notes and distinctive hints of roasted nuts derived from its time in oak. On the palate, it reveals a firm character; the vibrant, "cyanic" acidity is perfectly balanced with a 12% alcohol content, creating a structured and full-bodied mouthfeel. The oak integration lends the wine a velvety texture and a lingering, polished finish. This Khikhvi perfectly pairs with roasted poultry, buttery fish dishes, cream-based sauces, and aged cheeses.
