ბოლნისი არის ადგილწარმოშობის დასახელების ღვინო. ასურეთული შავისგან ქვევრში ქართული ტრადიციული მეთოდით დამზადებული ღვინო ღია ალუბლისფერია. გამოკვეთილია მწიფე ხილის არომატები: ალუბლის კომპოტი, ჟოლოს მურაბა, კოწახური. მარტივად მისართმევი ახალგაზრდა ღვინო. აქვს თხელი სხეული და სასიამოვნო მჟავიანობა. პალეტზე გამოხატულია ალუბლისა და წითელი კენკრის ტონები.
სასურველია ღვინო მის ადრეულ ასაკში მიირთვათ, თუმცა რამდენიმე წელი ბოთლში კარგ ფორმას შეინარჩუნებს. კარგად შეეხამება ხემსს, თხის ყველს, ფრინველის ხორცის პაშტეტს კენკრის სოუსით და სოკოს კერძებს.
